Ingredients Needed

For this basic (but very tasty) cheese dip, you only need three things.

Ingredients for velveeta cheese dip.

Velveeta Cheese – This stuff melts so well. We opt for the Queso Blanco version (the white cheese), but the regular one works just as well.

Breakfast Sausage – Pick your favorite. For a spicy kick, try the spicy sausage.

Rotel – This stuff gives the cheese dip the flavor that it needs. Again, if you want spicier, get the spicier version

How To Make Velveeta Cheese Dip (Rotel Dip)

This recipe is as easy as it can get. Basically, we brown the sausage, combine it with the Velveeta cheese and Rotel, and microwave for a few minutes until ready. Easy peasy!

  • Break up the sausage and cook over medium high heat. I like to keep my sausage in big chunks and get some good color on them, flip and sear the other side, then break it into smaller pieces.

  • Next, cube up the Velveeta cheese and place it into a microwave safe container. Add the Rotel to the cheese.

If you like your cheese dip thick, drain the Rotel. If you want to keep it thinner, add all the contents of the Rotel can to the cheese. Your preference.

Tips

Perfect Sausage Searing: For maximum flavor, make sure to get a good sear on your sausage. Cook it over medium-high heat until it develops a nice brown crust. This not only enhances the texture but also deepens the flavor of the sausage, adding a smoky, caramelized taste to your cheese dip.

Gradual Cheese Melting: When melting the Velveeta cheese in the microwave, do it gradually to avoid boiling over or uneven melting. Heat it in short intervals, stirring in between each one. This controlled approach ensures that the cheese melts smoothly and evenly, preventing any hot spots or burning.

Balancing Dip Consistency: Adjust the consistency of your dip to your liking. If you prefer a thicker dip, drain the liquid from the Rotel before adding it to the cheese. For a thinner consistency, include the Rotel juice. This gives you control over the final texture, allowing you to tailor the dip to your preference or the occasion.

Using A Slow Cooker: Add the cubed cheese, cooked sausage, and a can of Rotel (diced tomatoes and green chilies) into the slow cooker (crock pot). Stir to combine. Cover and cook on low heat for about 2 hours, stirring occasionally, until the cheese is completely melted and the dip is well combined.

Variations

Spicy Fiesta Version: Craving some heat? Amp up your Velveeta cheese dip with a fiery twist! Swap in hot breakfast sausage and choose a spicy Rotel variety to kick things up a notch. For an extra zing, add a dash of cayenne pepper or finely diced jalapeños. This spicy version is perfect for those who love their dips with a bold, irresistible kick!

Vegetarian Delight: For a meat-free take on this classic, substitute the breakfast sausage with a vegetarian alternative, like plant-based crumbles or chopped mushrooms sautéed with onion and garlic. You can also add black beans or corn for a hearty, veggie-packed dip. This vegetarian variation is just as satisfying and flavorful, making it a hit among all your guests!

Smoky Bacon Twist: Transform your Velveeta cheese dip with the irresistible flavor of bacon. Replace the breakfast sausage with crispy, chopped, thick-cut bacon for a smoky depth. For an even richer taste, mix in a spoonful of bacon grease into the dip. This bacon-enhanced version adds a luxurious and savory dimension that bacon lovers will absolutely adore!

Other Ideas: Use ground beef instead of sausage. Use a packet of taco seasoning to really jazz it up. This Rotel dip recipe is quick and easy AND very easy to change up!
