How to Make Chewy Coconut Cookies

Step 1 – In a medium-sized bowl, whisk the flour, baking soda, and salt together until combined.

Step 2 – In a large bowl, using an electric mixer, cream together the butter and sugars at medium speed until light and fluffy, about 3-4 minutes. Add the egg and coconut extract, mixing on low speed until well combined.

Step 3 – Add the dry ingredients and mix on low speed until just combined. Fold in the shredded coconut until just combined.

Step 4 – Refrigerate the cookie batter for 30 minutes.

Step 5 – Preheat the oven to 350ºF. and line at least two baking sheets with parchment paper. Use a 2 tablespoon cookie scoop to portion the dough (press it gently together), and place them 2 inches apart on the prepared cookie sheet. Bake for 10-12 minutes, until they are slightly golden and the tops are dry.

Step 6 – Let them cool for 5 minutes on the sheet tray, then transfer to a wire rack to cool completely.
