- 6 cups Fresh peaches sliced thick (about 5-6 medium peaches)
- 1 tbsp Fresh lemon juice
- 1 cup Granulated sugar divided
- 1/2 cup Unsalted butter melted
- 3/4 cup All-purpose flour
- 2 tsps Baking powder
- 1/4 tsp Ground cinnamon
- 1/2 tsp Kosher salt
- 1/2 tsp Vanilla extract
- 3/4 cup Milk
Preheat oven to 350°F and melt the butter in a 9×9-inch baking dish (2-quart).
1/2 cup Unsalted butter
In a large bowl, gently toss the sliced peaches with the fresh lemon juice and 1/2 cup sugar and set aside.
6 cups Fresh peaches, 1 tbsp Fresh lemon juice, 1 cup Granulated sugar
In another bowl, whisk together the remaining 1/2 cup sugar, flour, baking powder, kosher salt, and cinnamon. Add the milk and vanilla extract and stir just until the batter comes together. Don’t overmix.
3/4 cup All-purpose flour, 2 tsps Baking powder, 1/4 tsp Ground cinnamon, 1/2 tsp Kosher salt, 1/2 tsp Vanilla extract, 3/4 cup Milk
Pour the batter directly over the melted butter. Do not stir. Arrange the peaches evenly over the batter, without stirring.
Bake for 45 to 55 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges. Allow the cobbler to cool for about 15-20 minutes before serving.
- Thick peach slices hold their shape better during baking.
- Don’t stir the layers after adding the batter and peaches. That’s what creates the classic cobbler texture.
- If your peaches are extra ripe and juicy, let the cobbler cool a little longer before serving so the juices have time to thicken.
