Spinach Artichoke French Bread Pizza Recipe

Ingredients

  • 1 loaf French Bread
  • 10 ounces Frozen chopped spinach thawed and squeezed dry
  • 14 ounce can Artichoke quarters rough chopped and patted dry
  • 3/4 cup Mayonnaise
  • 2 cloves Garlic minced
  • 1 cup shredded Parmesan cheese
  • 8 ounces shredded Pepper Jack cheese
  • 1/2 tsp Kosher salt
  • 1/2 tsp Black pepper

Instructions

  • Slice the French bread in half lengthwise, scoop out some of the insides, and place it on a parchment paper-lined baking sheet. Preheat oven to broil. Toast the bread lightly, then reduce oven temperature to 350ºF.

  • In a bowl, combine mayonnaise, shredded Pepper Jack cheese, minced garlic, shredded parmesan, spinach, chopped artichokes, salt, and pepper. Mix until well combined.

  • Divide the spinach artichoke mixture in half, and spread it evenly over the toasted bread halves.
  • Bake 25-30 minutes, until the cheese is melted, bubbly, and lightly golden around the edges. Let them cool about 5 minutes before slicing and serving.

Notes

  • Be sure to squeeze as much moisture as possible from the thawed spinach, so the pizzas don’t get soggy. Also, pat the artichokes dry with paper towels.
  • Toasting the bread first helps keep the center from getting soft.
  • Freshly shredded cheese melts better than pre-shredded cheese.
