Ingredients
1poundSmoked pulled pork buttchopped
1Tortilla chipslarge, sturdy
1cupBlack beansoptional
1cupCorn kernelsoptional
2cupsQueso cheese diphomemade or store-bought
1Jalapeñossliced, 1 to 2
1cupRoma tomatoesdiced
½cupRed oniondiced
Cilantrochopped (for garnish)
Sour cream and/or guacamolefor serving
Instructions
Preheat oven to 350°F.
Spread tortilla chips in an even layer on a large baking sheet.

Top with chopped smoked pork butt. Add beans, corn, or olives if using.

Bake for 15–20 minutes, until heated through.
Remove from the oven and drizzle with hot queso.

Add jalapeños, tomatoes, red onion, and cilantro.

Nachos are best enjoyed right out of the oven. For easy prep, keep leftover pulled pork frozen or refrigerated separately, then assemble fresh batches whenever you want nachos.
