Ingredients

  • 8 ounces Cream cheese softened
  • 2 1/2 cups Shredded sharp cheddar cheese
  • 1/3 cup Mayonnaise
  • 4 ounces Diced pimentos drained and patted dry
  • 1/2 tsp Garlic powder
  • 1/4 tsp Onion powder
  • 1/2 tsp Ground black pepper
  • 2/3 cup Chopped Pecans

Instructions

  • Beat the softened cream cheese in a large mixing bowl until smooth and creamy. Add the mayonnaise, shredded sharp cheddar, drained pimentos, garlic powder, onion powder, and black pepper. Stir until everything is evenly combined.
8 ounces Cream cheese, 2 1/2 cups Shredded sharp cheddar cheese, 1/3 cup Mayonnaise, 4 ounces Diced pimentos, 1/2 tsp Garlic powder, 1/4 tsp Onion powder, 1/2 tsp Ground black pepper
  • Lay a large piece of plastic wrap on a flat surface. Spoon the cheese mixture into the center and use the plastic wrap to shape it into a ball. Wrap tightly and refrigerate for at least 2 hours. Overnight is even better.
  • When ready to serve, spread the chopped pecans on a plate or shallow dish. Unwrap the chilled cheese ball and roll it in the pecans, gently pressing them into the surface until completely coated. Serve with your favorite crackers, toasted baguette slices, pretzels, or fresh vegetables.
    2/3 cup Chopped Pecans

Notes

Drain the pimentos thoroughly and pat them dry before adding them to the cheese mixture.
For even more flavor, lightly toast the pecans, then let them cool completely before coating the cheese ball.
