Lemon White Bean Salad Recipe

This lemon white bean salad is bright, fresh, and loaded with flavor. A quick, easy side dish that’s ready in minutes with no fancy ingredients.

Ingredients

Dressing

  • 2 tbsp Lemon juice freshly squeezed
  • 1 1/2 tsp Lemon zest
  • 2 tbsp Red wine vinegar
  • 1 tbsp Shallot minced
  • 1 clove Garlic minced
  • 1/2 tsp Dijon mustard
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Red pepper flakes
  • 1/3 cup Olive oil

Salad Items

  • 2 cans White beans 15oz, Cannellini or Great Northern beans
  • 1/3 cups Parsley chopped
  • 1/4 cup Green onion 3-4 green onions, sliced
  • 1/4 cup Feta cheese

Instructions

  • Add dressing ingredients to a large bowl. Let it sit for 10 minutes or so then whisk in olive oil slowly until well combined.
    2 tbsp Lemon juice, 1 1/2 tsp Lemon zest, 2 tbsp Red wine vinegar, 1 tbsp Shallot, 1 clove Garlic, 1/2 tsp Dijon mustard, 1/2 tsp Kosher salt, 1/4 tsp Black pepper, 1/4 tsp Red pepper flakes, 1/3 cup Olive oil
  • Add the white beans, green onions, and parsley to the bowl and mix gently until combined well. Top with feta cheese and serve.

Notes

Leftovers? Store them in an airtight container for up to 2 days—but this salad is best fresh.
