Cilantro Lime Grilled Chicken Skewers
These cilantro lime grilled chicken skewers are bright, fresh, smoky, and ridiculously flavorful. Easy to grill, perfect for summer dinners, cookouts, or meal prep.

- 2 chicken breasts cut into cubes
- 1/4 cup olive oil
- 1/4 cup fresh cilantro chopped
- 2 teaspoons garlic minced
- 1/4 cup fresh lime juice
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
Cut the chicken breasts into evenly sized cubes.
In a large bowl, whisk together the olive oil, cilantro, garlic, lime juice, kosher salt, and black pepper.
Add the chicken and toss well to coat. Cover and refrigerate for 1-2 hours.
Preheat the grill for direct heat cooking.
Thread the chicken onto skewers.
Place the skewers over direct heat and grill, turning as needed, until the chicken develops good color and light char.
If needed, move the skewers over indirect heat to finish cooking gently.
Cook the chicken to 160 degrees F, then remove from the grill and rest for several minutes. Carryover cooking will bring the chicken to 165 degrees F.
Grill lime halves during the last few minutes of cooking and squeeze over the chicken before serving.
- Do not marinate the chicken longer than 2 hours. The lime juice can start to break down the texture of the chicken.
- Pull the chicken around 160 degrees F and let carryover cooking finish the job so the chicken stays juicy.
- If using wooden skewers, soak them in water for at least 30 minutes before grilling.
