Baked Brown Rice

Perfectly tender and fluffy baked brown rice made with chicken stock, onion, and garlic. An easy, hands-off side dish for any meal.

Ingredients

  • 1 tbsp Olive oil
  • 1/3 cup Onion diced fine
  • 2 cloves Garlic Minced
  • 3 1/4 cup Chicken stock
  • 1 1/2 cup Brown rice long grain, rinsed
  • 1/4 cup Parsley chopped
  • 1/2 tsp Kosher salt
  • Salt and pepper Optional, to taste

Instructions

  • Preheat the oven to 375°F.
  • Heat the olive oil in a Dutch oven over medium-low heat. Add the diced onion and cook for about 10 minutes, stirring occasionally, until softened and lightly golden.

  • Add the minced garlic and cook for 1 minute more.

  • Pour in the chicken stock and bring to a boil.
    3 1/4 cup Chicken stock
  • Remove the Dutch oven from the heat. Stir in the brown rice and kosher salt.
    1 1/2 cup Brown rice, 1/2 tsp Kosher salt
  • Cover with a tight-fitting lid and bake for 60 minutes, or until the rice is tender and the liquid has been absorbed.
  • Remove from the oven and fluff the rice with a fork.
  • Stir in the chopped parsley. Taste and season with additional salt and pepper, if desired.

  • Serve warm and enjoy.

Notes

Cooking times may vary slightly depending on the brand and type of brown rice used. The rice is done when it is tender and the liquid has been absorbed.
