Mixed Melon Fruit Salad
A refreshing summer melon salad made with juicy watermelon, cantaloupe, and honeydew tossed in a deliciously tangy honey lime mint dressing.

- 1/2 large Honeydew melon
- 1/2 large Cantaloupe
- 1/2 large Personal size seedless watermelon
- 1 tsp Lime zest zest one large lime
- 1/3 cup Fresh mint about 3-4 sprigs
- 3 tbsp Lime juice about one large lime
- 2 tbsp Honey or agava
Dice the melons into 1-inch cubes. Place them in a large mixing bowl, cover with plastic wrap and refrigerate for at least one hour.

When ready to serve drain any excess liquid from the mixing bowl. Sprinkle the fresh mint and lime zest over the melons.
1 tsp Lime zest, 1/3 cup Fresh mint
In a measuring cup or small bowl whisk together the lime juice and honey.
3 tbsp Lime juice, 2 tbsp Honey
Drizzle the dressing over the fruit and toss gently until evenly coated.
Serve immediately.
Make Ahead - This salad is best served immediately. If you need to make ahead dice the melons, place them in an airtight container, and refrigerate them undressed for a couple of hours. When ready to serve add the lime zest and mint, drizzle with the dressing, and serve.
Storing - Store leftovers in an airtight container in the refrigerator for up to 24 hours. Try tossing it in a blender for a refreshing smoothie!
