Mixed Melon Fruit Salad

A refreshing summer melon salad made with juicy watermelon, cantaloupe, and honeydew tossed in a deliciously tangy honey lime mint dressing.

Ingredients

  • 1/2 large Honeydew melon
  • 1/2 large Cantaloupe
  • 1/2 large Personal size seedless watermelon
  • 1 tsp Lime zest zest one large lime
  • 1/3 cup Fresh mint about 3-4 sprigs
  • 3 tbsp Lime juice about one large lime
  • 2 tbsp Honey or agava

Instructions

  • Dice the melons into 1-inch cubes. Place them in a large mixing bowl, cover with plastic wrap and refrigerate for at least one hour.
    1/2 large Honeydew melon, 1/2 large Cantaloupe, 1/2 large Personal size seedless watermelon
  • When ready to serve drain any excess liquid from the mixing bowl. Sprinkle the fresh mint and lime zest over the melons.
    1 tsp Lime zest, 1/3 cup Fresh mint
  • In a measuring cup or small bowl whisk together the lime juice and honey.
    3 tbsp Lime juice, 2 tbsp Honey
  • Drizzle the dressing over the fruit and toss gently until evenly coated.
  • Serve immediately.

Notes

Make Ahead - This salad is best served immediately. If you need to make ahead dice the melons, place them in an airtight container, and refrigerate them undressed for a couple of hours. When ready to serve add the lime zest and mint, drizzle with the dressing, and serve.
Storing - Store leftovers in an airtight container in the refrigerator for up to 24 hours. Try tossing it in a blender for a refreshing smoothie!
