Frito Pie Casserole Recipe

- 1 lb Ground beef
- 1 Onion medium, diced
- 2 clove Garlic minced
- 1 package Taco seasoning
- 1 tbsp Chili powder
- 10 oz Ro-tel
- 10 oz Enchilada sauce
- 15 oz Black beans
- 1 cup Corn
- 2 cup Cheese
Grease a 9×13 baking dish and preheat the oven to 350 degrees Fahrenheit.
Heat a large skillet over medium heat and add the ground beef. Brown the beef and drain if needed. Once almost browned add the onions and continue cooking until onions start to become translucent. Add the garlic and cook for an additional minute.
Add the taco seasoning packet, the chili powder, and a 1/4 cup of water and stir. Next add the Ro-tel, the beans, the enchilada sauce, and the corn to the skillet and stir to combine well. Continue cooking for 5 minutes.
Add half the Fritos to the bottom of the 9×13 baking dish evenly. Add 1/2 cup of cheese on top of the Fritos. Next, add the beef mixture then top with 1 cup of cheese. Add the remaining Fritos and top with remaining cheese.
Bake uncovered for approximately 20 minutes until cheese is melted. Remove from the oven and allow to stand for 5-7 minutes before serving.
Substitute ground beef with ground turkey or ground chicken for fewer calories.
Storage
Leftover Frito pie can be stored in an airtight container in the refrigerator for 3-4 days.
To freeze, allow to cool completely, then wrap tightly. Store in the freezer for up to 2 months.
To reheat, tent loosely with aluminum foil and bake at 350 for 20-30 minutes or reheated to your preferred temperature.
Individual portions can be reheated in the microwave for 1-2 minutes.
