- 10 C Water
- 3/4 C Salt
- 1/2 C Sugar
- 4 Rosemary Sprigs
- 2 tbsp Peppercorns
- 2 Bay leafs
- 1/2 Onion
- 6 cloves Garlic, cracked
- 1 tbsp Paprika
- 1/4 tsp Cayenne
Dissolve salt, sugar in the water
Add the rest of the ingredients
Add the meat to the brine
Fully submerge meat and refrigerate for 12-18 hours, depending on size of cut of meat
