Basmati Rice Risotto (Stick Of Butter Rice)

Basmati rice risotto is an awesome side dish for any meal.  My sister found this recipe on a bag of basmati rice, and we have been making it since. It’s also known as Stick of Butter Rice or Rice Consommé.

It’s another super easy, dump-and-bake kind of recipe.  No standing over the cooktop.  This rice is simple but so full of flavor.

Ingredients Needed

This recipe calls for very few ingredients. It’s amazing how much flavor is in this dish with this handful of ingredients.

Basmati Rice – Basmati rice is aromatic and has a light, fluffy texture when cooked. Perfect for soaking up all those yummy flavors.

Beef Consomm̩ РThis is like a beef broth with a deeper flavor. It adds a rich, meaty taste to your risotto.

French Onion Soup – This brings in a savory, oniony kick. It’s like a flavor booster that makes everything taste better.

Sliced Mushrooms – Mushrooms add a nice earthy touch and a bit of texture contrast. They’re like little flavor sponges in your risotto.

Butter – A whole stick of butter makes everything rich and creamy. It’s the secret to that indulgent, melt-in-your-mouth goodness.

Freshly Grated Parmesan Cheese – Sprinkled on top at the end, it adds a salty, cheesy finish that really rounds out the dish.

How to Make Basmati Rice Risotto (Stick Of Butter Rice)

  • Preheat the oven to 350 degrees F.
  • Place the stick of butter in the casserole dish and allow it to melt in the preheating oven. Once the butter is melted, combine the beef consommé soup, french onion soup, sliced mushrooms, and rice in the casserole dish.

Optionally sprinkle some chopped parsley on top for some color. Serve with your favorite main dish. Don’t be fooled; it might not be a pretty dish, but it is extremely delicious!

This dish goes great with any protein, such as our Thick Cut Bone-In Pork Chop, Roasted Chicken with Dijon Cream Sauce, or our amazingly rich Braised Beef Cheeks.

Tips

You can substitute brown rice, jasmine rice, or wild rice. But don’t use instant rice. It will come out dry and hard.

The original recipe calls for margarine, but I use real butter. You can use margarine if you prefer.

The recipe calls for two tablespoons of parmesan, but I have been known to put way more than that on top.

Variations

Vegetarian Version: Replace the beef consommé with vegetable broth or mushroom broth for a vegetarian-friendly dish. You can also add more varieties of vegetables like peas, carrots, or bell peppers for extra nutrition and color.

Low-Sodium Option: For those watching their salt intake, use low-sodium broths and soups. You can also reduce the amount of parmesan cheese or opt for a lower-sodium cheese.

Spicy Kick: Add some spice with a pinch of red pepper flakes or diced jalapeños mixed in before baking.

Herb Infusion: For an aromatic twist, add fresh herbs like thyme, rosemary, or basil. These can be mixed in before baking or sprinkled on top after cooking.

Protein-Packed: Stir in some cooked chicken, shrimp, or beef after baking for a heartier meal.
